Overview:
Uzu Ramen has been building up its business and following for years. With a focused menu and no frills approach it established itself among the favorites for ramen in D.C. They have a stall in Union Market and a counter in the Grace Street spaces near the beloved Green Almond Pantry. They offer a few variations on ramen and a couple pre-packaged sides like seaweed salad or kimchi.

The house style is a chicken bone broth done in either salt (shio), soy (shoyu), or miso variations. The noodles are what stand out here. They are chewy and the rightful centerpiece to the bowl. Vegan options are available. Quality ingredients, a well-made broth, and great noodles add up to a memorable bowl. Don’t sleep on the Japanese curry version that does not hold back on spice, but like the other ramens is kept in balance.
Chef/Owner Hiro Mitsui came to the States to play semi-pro basketball (which is referenced in some of the minimalist decor) and crossed over to food. He did stints at a few places, including Toki Underground and Maketto. He started with other kinds of comfort food before focusing on ramen when he opened the Union Market spot. Now coming up on a decade, Uzu remains a bit of a hidden gem. But, hopefully, the second location in Georgetown leads to greater fame.

Washington City Paper: Former Washington City Paper food writer and noted Japanophile Laura Hayes has been a fan for years. She wrote about its opening at Union Market, the precursor stall, the owners’ dog, and though we can’t find the link we recall a few random plugs on social media.
