Overview:
Apapacho Taqueria takes over the space recently vacated by Las Gemalas, with little changes to the décor. But it is a new place and a new team, who came from the excellent fine-dining Mexican restaurant Maiz64. The closing of Maiz64 is 14th Street’s loss and Union Market’s gain. Apapacho focuses on a few tacos and not much else. The simple formula, however, is a platform for some complex layering of flavors. These tacos are immediately part of the “best-of” conversation in D.C.
The ingredients are made fresh. The guacamole has some chunkiness to it. The location included the tortilla-making machine from the prior occupants, and the love of maize varieties carries over from Maiz64. Tortillas are done in-house. Fillings tend to be fried or otherwise include crispy elements. The chicken is a Milanese, the mushroom version also is fried. The tacos end up being packed with juiciness but not too busy to lose their focus. Take note, the sauces have some kick, and many of the tacos are seasoned well enough to not require any supplement.

The spot is counter service. Drink options include a limited number of beers and cocktails, plus aqua frescas and other non-alcoholic options.
Other Guidance: Located at street level off the La Cosecha food hall. GF can do well and vegetarians can find some options.
